Qing farmer En-Pei, Zhang transformed from a young person originally focused on making money through cultural creativity into a tea farmer with his feet firmly planted in the soil, sweating as he works. From improving the soil and hand-weeding to planting green manure, and then to the scientific study of tea making, including the force used in the tea infusion and the roasting temperature, he has revisited the principles behind these processes. By visiting old tea masters and long-time customers in Maokong, he has gradually rediscovered the flavors of his grandfather's tea.
